Ingredients

  • chickpeas - 200 grams (cooked or canned, drained)
  • all-purpose flour - 50 grams
  • fresh parsley - 30 grams, chopped
  • fresh dill - 15 grams, chopped
  • green onion - 2 stalks, finely chopped
  • garlic - 1 clove, minced
  • ground cumin - 1 teaspoon
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - for frying

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
  2. Add the flour, chopped parsley, dill, green onion, minced garlic, ground cumin, baking powder, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Heat a non-stick frying pan over medium heat and add a generous drizzle of olive oil.
  4. Using your hands, form small patties (about 5 cm in diameter) from the chickpea mixture.
  5. Once the oil is hot, carefully place the patties in the pan, cooking in batches if necessary to avoid overcrowding.
  6. Fry the fritters for about 4-5 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters from the pan and place them on a paper towel to absorb excess oil. Serve warm.
