  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Feta cheese, crumbled - 50 grams
  • Egg - 1 large

Steps

  1. In a bowl, mix the chickpea flour, water, olive oil, salt, and black pepper until smooth.
  2. Add the chopped parsley and crumbled feta cheese to the mixture, stirring to combine.
  3. In a separate bowl, beat the egg and then fold it into the chickpea flour mixture until fully integrated.
  4. Heat a non-stick skillet over medium heat and add a little olive oil to coat the surface.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake, cooking for 3-4 minutes until bubbles form on the surface.
  6. Flip the pancakes and cook for another 2-3 minutes until golden brown.
  7. Remove from the skillet and repeat with the remaining batter, adding more oil as needed.
  8. Serve warm, garnished with extra feta and parsley if desired.
