  • Red onion - 1/4 medium, finely chopped
  • Bell pepper (red or yellow) - 1 medium, diced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
