  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Feta cheese - 100 grams, crumbled
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the drained chickpeas, chopped red onion, minced garlic, diced bell pepper, diced zucchini, and halved cherry tomatoes.
  3. Drizzle the olive oil over the mixture and season with dried oregano, paprika, salt, and black pepper. Toss everything together until well-coated.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Sprinkle the crumbled feta cheese on top of the chickpea and vegetable mixture.
  6. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly golden.
  7. Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley.
