- Canned chickpeas - 400 grams, drained and rinsed

- Red onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Feta cheese - 100 grams, crumbled
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the drained chickpeas, chopped red onion, minced garlic, diced bell pepper, diced zucchini, and halved cherry tomatoes.
- Drizzle the olive oil over the mixture and season with dried oregano, paprika, salt, and black pepper. Toss everything together until well-coated.
- Transfer the mixture to a baking dish and spread it out evenly.
- Sprinkle the crumbled feta cheese on top of the chickpea and vegetable mixture.
- Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly golden.
