Ingredients

  • cooked chickpeas - 200 grams
  • fresh spinach - 100 grams
  • garlic - 2 cloves, minced
  • red onion - 50 grams, finely chopped
  • feta cheese - 50 grams, crumbled
  • breadcrumbs - 50 grams
  • egg - 1 large
  • dried oregano - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/2 teaspoon
  • olive oil - 2 tablespoons
  • whole wheat burger buns - 2
  • Greek yogurt - 100 grams (for sauce)
  • lemon juice - 1 tablespoon (for sauce)
  • fresh dill - 1 tablespoon, chopped (for sauce)

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
  2. Add the chopped spinach, minced garlic, red onion, crumbled feta cheese, breadcrumbs, egg, dried oregano, salt, and black pepper to the chickpeas. Mix until well combined.
  3. Form the mixture into two patties, about 1.5 inches thick.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, prepare the sauce by mixing the Greek yogurt, lemon juice, chopped dill, and a pinch of salt in a small bowl.
  6. Toast the whole wheat burger buns lightly in the remaining olive oil, if desired.
  7. Assemble the burgers by placing each patty on a bun and topping with a generous dollop of the yogurt sauce.
