- Octopus - 300 grams, cleaned and cut into bite-sized pieces
- Canned chickpeas - 400 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 small, finely chopped
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, bring 1 liter of salted water to a boil. Add the octopus and cook for 20 minutes until tender. Remove the octopus and let cool slightly before cutting into smaller pieces.
- In a skillet, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the cherry tomatoes to the skillet and cook for another 5 minutes until they begin to soften.
- Stir in the chickpeas, octopus pieces, oregano, lemon juice, salt, and pepper. Cook for an additional 5-7 minutes until everything is heated through and well combined.
- Remove from heat and stir in the chopped parsley before serving.
