Ingredients

  • Chicken breast - 300 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bell pepper - 1 medium, cut into 2.5 cm pieces
  • Red onion - 1 medium, cut into 2.5 cm pieces
  • Zucchini - 1 medium, sliced into rounds
  • Wooden skewers - 4 (soaked in water for 30 minutes if using)

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. While the chicken is marinating, prepare the vegetables by cutting the bell pepper, red onion, and zucchini into the appropriate sizes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated chicken, bell pepper, red onion, and zucchini alternately onto the soaked wooden skewers.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a couple of minutes before serving.
