- Chicken breast - 300 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bell pepper - 1 medium, cut into 2.5 cm pieces
- Red onion - 1 medium, cut into 2.5 cm pieces
- Zucchini - 1 medium, sliced into rounds
- Wooden skewers - 4 (soaked in water for 30 minutes if using)
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
- While the chicken is marinating, prepare the vegetables by cutting the bell pepper, red onion, and zucchini into the appropriate sizes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken, bell pepper, red onion, and zucchini alternately onto the soaked wooden skewers.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a couple of minutes before serving.
