- Dried oregano - 2 teaspoons
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Red onion - 1 medium, cut into chunks
- Bell pepper - 1 medium, cut into chunks
- Wooden skewers - 4, soaked in water for 30 minutes
Steps
- In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade.
- Cut the chicken thighs into 2.5 cm cubes and add them to the marinade, mixing well to ensure all pieces are coated. Cover the bowl and refrigerate for at least 30 minutes.
- While the chicken marinates, soak the wooden skewers in water to prevent burning during grilling.
- After marinating, thread the chicken pieces onto the skewers, alternating with chunks of red onion and bell pepper.
- Preheat a grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
