- Black pepper - 1/2 teaspoon
- Bell pepper - 1 medium, cut into chunks
- Red onion - 1 medium, cut into wedges
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade.
- Cut the chicken breast into bite-sized pieces and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by cutting the bell pepper and red onion into chunks.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, bell pepper, and red onion onto the skewers, alternating between chicken and vegetables.
- Once the grill is hot, place the skewers on it and cook for about 10-12 minutes, turning occasionally until the chicken is fully cooked and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
