Ingredients

  • Chicken breast - 400 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell pepper - 1 medium, cut into chunks
  • Red onion - 1 medium, cut into wedges
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade.
  2. Cut the chicken breast into bite-sized pieces and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by cutting the bell pepper and red onion into chunks.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken, bell pepper, and red onion onto the skewers, alternating between chicken and vegetables.
  6. Once the grill is hot, place the skewers on it and cook for about 10-12 minutes, turning occasionally until the chicken is fully cooked and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
  8. Serve the chicken kebabs warm, optionally with tzatziki sauce and pita bread.
