Ingredients

  • Swiss chard - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Potato - 1 medium, peeled and diced
  • Vegetable broth - 500 milliliters
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, garlic, carrot, and celery. Sauté for 5 minutes until the vegetables are softened.
  3. Stir in the diced potato and continue cooking for another 3 minutes.
  4. Add the chopped Swiss chard to the pot, stirring until it wilts down, about 2 minutes.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat and let it simmer for 15 minutes until the potato is tender.
  7. Season with lemon juice, salt, and black pepper to taste.
  8. Remove from heat and stir in the fresh dill just before serving.
