- Swiss chard - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Potato - 1 medium, peeled and diced
- Vegetable broth - 500 milliliters
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, garlic, carrot, and celery. Sauté for 5 minutes until the vegetables are softened.
- Stir in the diced potato and continue cooking for another 3 minutes.
- Add the chopped Swiss chard to the pot, stirring until it wilts down, about 2 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and let it simmer for 15 minutes until the potato is tender.
- Season with lemon juice, salt, and black pepper to taste.
- Remove from heat and stir in the fresh dill just before serving.
