Ingredients

  • Swiss chard - 200 grams, chopped
  • Long-grain rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh dill - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped Swiss chard to the saucepan and sauté for 3-4 minutes until wilted.
  5. Rinse the long-grain rice under cold water until the water runs clear, then add it to the saucepan with the sautéed vegetables.
  6. Pour in the vegetable broth, lemon juice, salt, and black pepper, stirring to combine.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Once cooked, remove from heat and fluff the rice with a fork. Stir in the fresh dill before serving.
