- Swiss chard - 200 grams, chopped
- Long-grain rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 ml
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh dill - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large saucepan over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped Swiss chard to the saucepan and sauté for 3-4 minutes until wilted.
- Rinse the long-grain rice under cold water until the water runs clear, then add it to the saucepan with the sautéed vegetables.
- Pour in the vegetable broth, lemon juice, salt, and black pepper, stirring to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and fluff the rice with a fork. Stir in the fresh dill before serving.
