Ingredients

  • Swiss chard - 200 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Almond flour - 150 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Heavy cream - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and chopped Swiss chard to the skillet, cooking until the chard is wilted and any moisture has evaporated, about 5-7 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the almond flour, baking powder, salt, and black pepper.
  5. In another bowl, beat the eggs with the heavy cream and the remaining tablespoon of olive oil until well combined.
  6. Mix the egg mixture into the almond flour mixture until a dough forms.
  7. Press about two-thirds of the dough into the bottom and up the sides of a greased pie dish, creating a crust.
  8. In the skillet with the cooled chard mixture, add the crumbled feta and mix well.
  9. Pour the chard and feta filling into the crust, spreading it evenly.
  10. With the remaining dough, crumble it over the top of the filling as a topping.
  11. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  12. Allow to cool slightly before slicing and serve warm.
