- Semolina - 100 grams
- Sugar - 80 grams
- Water - 250 milliliters
- Milk - 150 milliliters
- Butter - 30 grams
- Pistachios (chopped) - 30 grams
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- In a saucepan, combine the water and sugar, and bring to a boil until the sugar dissolves completely. Remove from heat and set aside.
- In another saucepan, melt the butter over medium heat. Add the semolina and stir continuously for about 5-7 minutes, or until it turns golden brown.
- Slowly pour in the milk while stirring to combine, followed by the vanilla extract and a pinch of salt. Continue mixing until the mixture thickens, about 5 minutes.
- Gradually add the prepared sugar syrup to the semolina mixture, stirring constantly until fully absorbed and the mixture is thick and homogenous.
- Remove from heat and let it cool slightly before transferring to a serving dish. Smooth the top with a spatula.
- Sprinkle the chopped pistachios generously on top and allow to cool completely at room temperature before serving.
