Ingredients

  • Semolina - 100 grams
  • Sugar - 80 grams
  • Water - 250 milliliters
  • Milk - 150 milliliters
  • Butter - 30 grams
  • Pistachios (chopped) - 30 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a saucepan, combine the water and sugar, and bring to a boil until the sugar dissolves completely. Remove from heat and set aside.
  2. In another saucepan, melt the butter over medium heat. Add the semolina and stir continuously for about 5-7 minutes, or until it turns golden brown.
  3. Slowly pour in the milk while stirring to combine, followed by the vanilla extract and a pinch of salt. Continue mixing until the mixture thickens, about 5 minutes.
  4. Gradually add the prepared sugar syrup to the semolina mixture, stirring constantly until fully absorbed and the mixture is thick and homogenous.
  5. Remove from heat and let it cool slightly before transferring to a serving dish. Smooth the top with a spatula.
  6. Sprinkle the chopped pistachios generously on top and allow to cool completely at room temperature before serving.
