- coconut milk - 100 milliliters
- sugar - 50 grams
- olive oil - 2 tablespoons
- vanilla extract - 1 teaspoon
- ground cinnamon - 1/2 teaspoon
- chopped walnuts - 30 grams
- pinch of salt
Steps
- In a saucepan, heat the olive oil over medium heat.
- Add the semolina and toast it for about 5 minutes, stirring constantly until it turns golden brown.
- In a separate bowl, mix the water, coconut milk, sugar, vanilla extract, ground cinnamon, and a pinch of salt.
- Gradually pour the liquid mixture into the toasted semolina, stirring continuously to avoid lumps.
- Reduce the heat to low and cook for another 10-15 minutes, stirring frequently until the mixture thickens.
- Once thickened, remove from heat and fold in the chopped walnuts.
- Pour the mixture into a greased dish and smooth the top with a spatula.
- Let it cool for at least 15 minutes before slicing and serving.
