Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Kefalotyri cheese - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Fresh oregano - 1 teaspoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
  3. Drizzle olive oil over the cauliflower, add minced garlic, oregano, salt, black pepper, and paprika; toss to coat evenly.
  4. Spread the cauliflower on a baking sheet lined with parchment paper and roast for 20 minutes, or until golden and tender.
  5. Remove the baking sheet from the oven, sprinkle the crumbled feta and grated kefalotyri cheese over the roasted cauliflower.
  6. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and slightly golden.
  7. Drizzle with lemon juice before serving and garnish with extra oregano if desired.
