  • Vegetable broth - 250 milliliters
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by ricing the cauliflower using a food processor or grater until it resembles rice grains.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until the vegetables are tender.
  4. Add the diced tomato to the skillet and cook for another 2 minutes until softened.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Stir in the riced cauliflower, dried oregano, salt, and black pepper. Mix well and cover the skillet.
  7. Reduce the heat to low and let it cook for about 10-12 minutes, stirring occasionally until the cauliflower is tender and the liquid has absorbed.
