- Vegetable broth - 250 milliliters
- Dried oregano - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Begin by ricing the cauliflower using a food processor or grater until it resembles rice grains.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until the vegetables are tender.
- Add the diced tomato to the skillet and cook for another 2 minutes until softened.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Stir in the riced cauliflower, dried oregano, salt, and black pepper. Mix well and cover the skillet.
- Reduce the heat to low and let it cook for about 10-12 minutes, stirring occasionally until the cauliflower is tender and the liquid has absorbed.
