Ingredients

  • Cauliflower - 300 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Oregano - 1 teaspoon, dried
  • Lemon juice - 1 tablespoon
  • Almond flour - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Bring a large pot of salted water to a boil and add the chopped cauliflower. Cook for about 5-7 minutes until tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a large mixing bowl, combine the drained cauliflower, sautéed spinach and garlic, crumbled feta cheese, dried oregano, lemon juice, almond flour, salt, and black pepper. Mix until well combined.
  5. Transfer the mixture back to the skillet and cook over low heat for about 5 minutes, stirring gently to combine the flavors.
  6. Serve warm, garnished with additional feta cheese and a sprinkle of oregano if desired.
