- Cauliflower - 300 grams, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Oregano - 1 teaspoon, dried
- Lemon juice - 1 tablespoon
- Almond flour - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Bring a large pot of salted water to a boil and add the chopped cauliflower. Cook for about 5-7 minutes until tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a large mixing bowl, combine the drained cauliflower, sautéed spinach and garlic, crumbled feta cheese, dried oregano, lemon juice, almond flour, salt, and black pepper. Mix until well combined.
- Transfer the mixture back to the skillet and cook over low heat for about 5 minutes, stirring gently to combine the flavors.
- Serve warm, garnished with additional feta cheese and a sprinkle of oregano if desired.
