- Cauliflower - 400 grams
- Mozzarella cheese, shredded - 100 grams
- Parmesan cheese, grated - 30 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cherry tomatoes, halved - 100 grams
- Cucumber, diced - 50 grams
- Red onion, thinly sliced - 30 grams
- Feta cheese, crumbled - 40 grams
- Tzatziki sauce - 4 tablespoons
Steps
- Preheat your oven to 220°C (425°F).
- Wash and chop the cauliflower into florets, then steam or microwave until soft, about 5-7 minutes.
- Drain any excess water from the cauliflower and let it cool slightly before transferring it to a clean kitchen towel. Squeeze out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1-2 cm thick.
- Bake the crust in the preheated oven for 25 minutes or until golden brown and firm.
- While the crust is baking, prepare the toppings: in a bowl, mix the cherry tomatoes, cucumber, and red onion with olive oil, salt, and pepper to taste.
- Once the crust is done, remove it from the oven and let it cool for a few minutes before topping it with the vegetable mixture, crumbled feta cheese, and tzatziki sauce.
- Slice and serve warm.
