Ingredients

  • Cauliflower - 400 grams
  • Mozzarella cheese, shredded - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes, halved - 100 grams
  • Cucumber, diced - 50 grams
  • Red onion, thinly sliced - 30 grams
  • Feta cheese, crumbled - 40 grams
  • Tzatziki sauce - 4 tablespoons

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Wash and chop the cauliflower into florets, then steam or microwave until soft, about 5-7 minutes.
  3. Drain any excess water from the cauliflower and let it cool slightly before transferring it to a clean kitchen towel. Squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  5. Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1-2 cm thick.
  6. Bake the crust in the preheated oven for 25 minutes or until golden brown and firm.
  7. While the crust is baking, prepare the toppings: in a bowl, mix the cherry tomatoes, cucumber, and red onion with olive oil, salt, and pepper to taste.
  8. Once the crust is done, remove it from the oven and let it cool for a few minutes before topping it with the vegetable mixture, crumbled feta cheese, and tzatziki sauce.
  9. Slice and serve warm.
