- Carrots - 300 grams, peeled and chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Vegetable broth - 500 milliliters
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the chopped carrots and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the carrots are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
- Stir in the fresh dill, parsley, lemon juice, salt, and black pepper to taste. Mix well and let it sit for a couple of minutes to allow the flavors to meld.
- Serve hot, garnished with additional herbs if desired.
