Ingredients

  • Carrots - 300 grams, peeled and chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the chopped carrots and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the carrots are tender.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
  5. Stir in the fresh dill, parsley, lemon juice, salt, and black pepper to taste. Mix well and let it sit for a couple of minutes to allow the flavors to meld.
  6. Serve hot, garnished with additional herbs if desired.
