- Pizza dough - 250 grams
- Eggplant - 100 grams, diced
- Red bell pepper - 50 grams, diced
- Zucchini - 50 grams, diced
- Red onion - 50 grams, diced
- Garlic - 2 cloves, minced
- Olives (green or black) - 30 grams, sliced
- Canned diced tomatoes - 200 grams
- Capers - 1 tablespoon
- Balsamic vinegar - 1 tablespoon
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the diced eggplant for about 5 minutes until softened. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and sauté the red bell pepper, zucchini, and red onion for about 3-4 minutes until they start to soften. Add the minced garlic and cook for an additional minute.
- Add the sautéed eggplant back to the skillet, along with the canned diced tomatoes, olives, capers, balsamic vinegar, dried oregano, salt, and black pepper. Simmer for 5-7 minutes until the mixture thickens slightly.
- While the caponata mixture simmers, roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled-out dough to a baking tray lined with parchment paper.
- Spread the caponata mixture evenly over the pizza dough.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil before slicing and serving.
