Ingredients

  • Pizza dough - 250 grams
  • Eggplant - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Zucchini - 50 grams, diced
  • Red onion - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Olives (green or black) - 30 grams, sliced
  • Canned diced tomatoes - 200 grams
  • Capers - 1 tablespoon
  • Balsamic vinegar - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the diced eggplant for about 5 minutes until softened. Remove from skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil and sauté the red bell pepper, zucchini, and red onion for about 3-4 minutes until they start to soften. Add the minced garlic and cook for an additional minute.
  4. Add the sautéed eggplant back to the skillet, along with the canned diced tomatoes, olives, capers, balsamic vinegar, dried oregano, salt, and black pepper. Simmer for 5-7 minutes until the mixture thickens slightly.
  5. While the caponata mixture simmers, roll out the pizza dough on a floured surface to your desired thickness and shape.
  6. Transfer the rolled-out dough to a baking tray lined with parchment paper.
  7. Spread the caponata mixture evenly over the pizza dough.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh basil before slicing and serving.
