Ingredients

  • Flatbread - 2 pieces (about 25cm each)
  • Eggplant - 150g, diced
  • Red bell pepper - 100g, diced
  • Zucchini - 100g, diced
  • Cherry tomatoes - 150g, halved
  • Green olives - 50g, pitted and sliced
  • Red onion - 50g, diced
  • Garlic - 2 cloves, minced
  • Balsamic vinegar - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced eggplant and sauté for about 5 minutes until it begins to soften.
  3. Add the red bell pepper, zucchini, and red onion to the skillet, cooking for another 5-7 minutes until all the vegetables are tender.
  4. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the halved cherry tomatoes, green olives, balsamic vinegar, salt, and black pepper to the skillet. Cook for another 5 minutes until the tomatoes are slightly softened.
  6. While the mixture is cooking, place the flatbreads on a baking sheet. Brush the remaining olive oil over each flatbread.
  7. Once the vegetable mixture is ready, evenly distribute it over the flatbreads.
  8. Bake the flatbreads in the preheated oven for about 8-10 minutes until the edges are crispy.
  9. Remove from the oven, sprinkle with fresh basil, and let cool for a minute before slicing.
  10. Serve immediately and enjoy!
