Ingredients
- Flatbread - 2 pieces (about 25cm each)
- Eggplant - 150g, diced
- Red bell pepper - 100g, diced
- Zucchini - 100g, diced
- Cherry tomatoes - 150g, halved
- Green olives - 50g, pitted and sliced
- Red onion - 50g, diced
- Garlic - 2 cloves, minced
- Balsamic vinegar - 2 tablespoons
- Olive oil - 3 tablespoons
- Fresh basil - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced eggplant and sauté for about 5 minutes until it begins to soften.
- Add the red bell pepper, zucchini, and red onion to the skillet, cooking for another 5-7 minutes until all the vegetables are tender.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the halved cherry tomatoes, green olives, balsamic vinegar, salt, and black pepper to the skillet. Cook for another 5 minutes until the tomatoes are slightly softened.
- While the mixture is cooking, place the flatbreads on a baking sheet. Brush the remaining olive oil over each flatbread.
- Once the vegetable mixture is ready, evenly distribute it over the flatbreads.
- Bake the flatbreads in the preheated oven for about 8-10 minutes until the edges are crispy.
- Remove from the oven, sprinkle with fresh basil, and let cool for a minute before slicing.
- Serve immediately and enjoy!
