- Green cabbage - 300 grams, chopped
- Carrots - 100 grams, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Celery stalks - 2, diced
- Tomatoes - 2 medium, chopped
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the chopped cabbage, oregano, thyme, salt, and pepper. Cook for 5 minutes until the cabbage starts to wilt.
- Add the chopped tomatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- Once the vegetables are tender, stir in the lemon juice and adjust the seasoning if necessary.
- Serve hot, garnished with fresh parsley.
