Ingredients

  • Green cabbage - 300 grams, chopped
  • Carrots - 100 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Celery stalks - 2, diced
  • Tomatoes - 2 medium, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the chopped cabbage, oregano, thyme, salt, and pepper. Cook for 5 minutes until the cabbage starts to wilt.
  4. Add the chopped tomatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  5. Once the vegetables are tender, stir in the lemon juice and adjust the seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.
