- Green cabbage - 8 large leaves
- Ground beef - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato puree - 200 grams
- Olive oil - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
- Lemon juice - 1 tablespoon
Steps
- Begin by bringing a large pot of salted water to a boil. Carefully add the cabbage leaves and blanch for about 3-4 minutes until softened. Remove and set aside to cool.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- In a mixing bowl, combine the ground beef, sautéed onion and garlic, chopped parsley, dried oregano, salt, and black pepper. Mix until well combined.
- Place about 2 tablespoons of the meat mixture at the base of each cabbage leaf. Fold in the sides and roll tightly to enclose the filling. Repeat for all leaves.
- In a large pot, spread a thin layer of tomato puree on the bottom. Arrange the cabbage rolls seam-side down in the pot. Pour the remaining tomato puree over the rolls and drizzle with lemon juice.
- Cover the pot and simmer on low heat for about 30-35 minutes, until the meat is cooked through and the flavors meld together.
- If desired, sprinkle crumbled feta cheese over the rolls before serving.
