Ingredients
- Green cabbage - 4 large leaves
- Quinoa - 100 grams (1/2 cup, uncooked)
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 2 teaspoons
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 250 ml
Steps
- In a medium saucepan, combine quinoa and 250 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed.
- While the quinoa is cooking, bring a large pot of salted water to a boil. Add the cabbage leaves and blanch for 2-3 minutes until they are tender. Remove and set aside to cool.
- In a mixing bowl, combine the cooked quinoa, crumbled feta cheese, chopped parsley, dill, lemon juice, minced garlic, salt, and black pepper. Mix well until all ingredients are combined.
- Lay a cabbage leaf flat and place 2-3 tablespoons of the quinoa mixture at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip, creating a roll. Repeat with the remaining leaves and filling.
- In a large skillet, heat olive oil over medium heat. Place the cabbage rolls seam-side down in the skillet and lightly brown them for about 3-4 minutes on each side.
- Add a splash of water to the skillet (about 50 ml) and cover. Let the rolls steam for an additional 10 minutes to heat through.
- Serve warm, drizzled with a little more lemon juice if desired.
