Ingredients
- Green cabbage - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Kalamata olives - 50 grams, pitted and sliced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Remove the outer leaves of the cabbage and cut it into quarters, removing the core. Then slice the cabbage into thin strips to create noodles.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cabbage noodles to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften.
- Add the cherry tomatoes, Kalamata olives, dried oregano, lemon juice, salt, and black pepper to the skillet. Stir well and cook for another 5 minutes until the tomatoes are slightly softened.
- Remove from heat and stir in the chopped parsley. Serve warm, garnished with additional parsley if desired.
