Ingredients

  • Cabbage leaves - 8 large
  • Cooked brown rice - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Bring a large pot of salted water to a boil. Carefully add the cabbage leaves and blanch for 2-3 minutes until slightly softened. Remove and place in cold water to stop the cooking process.
  2. In a mixing bowl, combine the cooked brown rice, crumbled feta cheese, chopped dill, chopped parsley, olive oil, lemon juice, minced garlic, salt, and black pepper. Mix until well combined.
  3. Lay out a cabbage leaf on a flat surface. Place about 2 tablespoons of the rice mixture at the base of the leaf and fold in the sides, then roll it up tightly, starting from the base. Repeat with the remaining leaves and filling.
  4. In a large skillet, add a little olive oil and place the cabbage rolls seam-side down. Cook over medium heat for about 5 minutes, turning occasionally until the rolls are lightly golden.
  5. Add a splash of water to the skillet, cover, and steam for an additional 10 minutes to heat through. Serve warm.
