- Cabbage - 200 grams, finely shredded
- Cooked brown rice - 150 grams
- Chickpeas - 100 grams, drained and rinsed
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Whole wheat breadcrumbs - 50 grams
- Lemon juice - 1 tablespoon
- Cucumber - 100 grams, sliced (for garnish)
- Tomato - 100 grams, sliced (for garnish)
- Whole grain burger buns - 2
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the shredded cabbage to the skillet and cook for another 5-7 minutes until it wilts down, stirring occasionally.
- In a mixing bowl, combine the cooked brown rice, sautéed cabbage mixture, drained chickpeas, chopped parsley, dried oregano, salt, black pepper, lemon juice, and breadcrumbs. Mix well until everything is evenly combined.
- Using your hands, shape the mixture into two equal-sized patties.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the patties and cook for about 5-6 minutes on each side until they are golden brown and crispy.
- Toast the whole grain burger buns lightly on the skillet for 1-2 minutes.
- Assemble the burgers by placing each patty on a bun and topping with sliced cucumber and tomato. Serve immediately.
