  • Cherry tomatoes - 200 grams

  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and slice the zucchini, eggplant, red bell pepper, and potato into thin rounds.
  3. In a large bowl, combine the sliced vegetables with cherry tomatoes, minced garlic, olive oil, lemon juice, oregano, salt, and pepper. Toss until well coated.
  4. Spread the vegetable mixture evenly on a large baking tray.
  5. Place the white fish fillets on top of the vegetables, seasoning them lightly with salt and pepper.
