Ingredients

  • Zucchini - 200 grams
  • Eggplant - 200 grams
  • Red bell pepper - 100 grams
  • Red onion - 100 grams
  • Garlic - 3 cloves
  • Olive oil - 4 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Preheat your BBQ grill to medium heat.
  2. Wash and chop the zucchini, eggplant, red bell pepper, and red onion into bite-sized pieces.
  3. Mince the garlic cloves and combine them with olive oil, dried oregano, salt, and black pepper in a mixing bowl.
  4. Add the chopped vegetables to the bowl and toss until all pieces are well coated with the oil and spice mixture.
  5. Transfer the seasoned vegetables to a grill basket or skewers for BBQ grilling.
  6. Place the grill basket on the BBQ and cook for about 25-30 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Once cooked, remove from the grill and sprinkle with fresh chopped parsley before serving.
