- Zucchini - 200 grams
- Eggplant - 200 grams
- Red bell pepper - 100 grams
- Red onion - 100 grams
- Garlic - 3 cloves
- Olive oil - 4 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
Steps
- Preheat your BBQ grill to medium heat.
- Wash and chop the zucchini, eggplant, red bell pepper, and red onion into bite-sized pieces.
- Mince the garlic cloves and combine them with olive oil, dried oregano, salt, and black pepper in a mixing bowl.
- Add the chopped vegetables to the bowl and toss until all pieces are well coated with the oil and spice mixture.
- Transfer the seasoned vegetables to a grill basket or skewers for BBQ grilling.
- Place the grill basket on the BBQ and cook for about 25-30 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Once cooked, remove from the grill and sprinkle with fresh chopped parsley before serving.
