- Zucchini - 1 medium, sliced
- Eggplant - 1 medium, sliced
- Potato - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Tomato - 2 medium, diced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Olive oil - 4 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the sliced zucchini, eggplant, potato, bell pepper, and onion.
- Add the diced tomatoes, minced garlic, olive oil, chopped parsley, dried oregano, salt, and black pepper to the bowl and mix well to coat the vegetables evenly.
- Layer half of the vegetable mixture in a baking dish.
- Add the remaining vegetable mixture on top, spreading it out evenly.
- Cover the dish with aluminum foil and bake for 40 minutes.
- Remove the foil and bake for an additional 20 minutes, or until the vegetables are tender and lightly browned.
- Let it cool for 5 minutes before serving.
