Ingredients

  • Zucchini - 1 medium, sliced
  • Eggplant - 1 medium, sliced
  • Potato - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Tomato - 2 medium, diced
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 4 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the sliced zucchini, eggplant, potato, bell pepper, and onion.
  3. Add the diced tomatoes, minced garlic, olive oil, chopped parsley, dried oregano, salt, and black pepper to the bowl and mix well to coat the vegetables evenly.
  4. Layer half of the vegetable mixture in a baking dish.
  5. Add the remaining vegetable mixture on top, spreading it out evenly.
  6. Cover the dish with aluminum foil and bake for 40 minutes.
  7. Remove the foil and bake for an additional 20 minutes, or until the vegetables are tender and lightly browned.
  8. Let it cool for 5 minutes before serving.
