- Long-grain rice - 150 grams
- Zucchini - 1 medium, diced
- Eggplant - 1 small, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Vegetable broth - 300 ml
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the diced zucchini, eggplant, bell pepper, onion, and garlic. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt, pepper, and dried oregano. Toss to coat the vegetables evenly.
- Spread the vegetables on a baking sheet and roast in the preheated oven for about 20 minutes, or until they are tender and slightly caramelized.
- While the vegetables are roasting, rinse the rice under cold water until the water runs clear. This helps to remove excess starch.
- In a medium saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped tomato and cook for 2-3 minutes until softened.
- Add the rinsed rice to the saucepan and stir for 1-2 minutes until the rice is coated with the tomato juices.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and has absorbed the liquid.
- Once the rice is ready, add the roasted vegetables to the pot and gently mix until combined. Adjust the seasoning with more salt and pepper if needed.
- Serve the Briam Rice warm, garnished with crumbled feta cheese and fresh parsley.
