Ingredients

  • Long-grain rice - 150 grams
  • Zucchini - 1 medium, diced
  • Eggplant - 1 small, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 300 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the diced zucchini, eggplant, bell pepper, onion, and garlic. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt, pepper, and dried oregano. Toss to coat the vegetables evenly.
  3. Spread the vegetables on a baking sheet and roast in the preheated oven for about 20 minutes, or until they are tender and slightly caramelized.
  4. While the vegetables are roasting, rinse the rice under cold water until the water runs clear. This helps to remove excess starch.
  5. In a medium saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped tomato and cook for 2-3 minutes until softened.
  6. Add the rinsed rice to the saucepan and stir for 1-2 minutes until the rice is coated with the tomato juices.
  7. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and has absorbed the liquid.
  8. Once the rice is ready, add the roasted vegetables to the pot and gently mix until combined. Adjust the seasoning with more salt and pepper if needed.
  9. Serve the Briam Rice warm, garnished with crumbled feta cheese and fresh parsley.
