Ingredients

  • Zucchini - 200 grams, sliced
  • Eggplant - 200 grams, diced
  • Potatoes - 200 grams, sliced
  • Red bell pepper - 100 grams, sliced
  • Onion - 100 grams, sliced
  • Garlic - 3 cloves, minced
  • Tomatoes - 200 grams, chopped
  • Olive oil - 4 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the zucchini, eggplant, potatoes, red bell pepper, onion, and garlic.
  3. Add the chopped tomatoes, olive oil, parsley, oregano, salt, and black pepper to the bowl and mix well to coat the vegetables evenly.
  4. Transfer the mixed vegetables to a baking dish, spreading them out evenly.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and slightly caramelized.
  7. Remove from the oven and let it cool for a few minutes before serving.
