- Zucchini - 200 grams, sliced
- Eggplant - 200 grams, diced
- Potatoes - 200 grams, sliced
- Red bell pepper - 100 grams, sliced
- Onion - 100 grams, sliced
- Garlic - 3 cloves, minced
- Tomatoes - 200 grams, chopped
- Olive oil - 4 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the zucchini, eggplant, potatoes, red bell pepper, onion, and garlic.
- Add the chopped tomatoes, olive oil, parsley, oregano, salt, and black pepper to the bowl and mix well to coat the vegetables evenly.
- Transfer the mixed vegetables to a baking dish, spreading them out evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and let it cool for a few minutes before serving.
