Ingredients

  • Pizza dough - 200 grams
  • Eggplant - 100 grams, diced
  • Zucchini - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Tomato - 100 grams, diced
  • Red onion - 50 grams, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, combine the diced eggplant, zucchini, red bell pepper, tomato, red onion, minced garlic, olive oil, oregano, salt, and black pepper. Toss well to coat the vegetables.
  3. Spread the vegetable mixture onto a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes, stirring halfway through.
  4. While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled-out dough to a pizza stone or baking sheet.
  6. Once the vegetables are roasted, remove them from the oven and spread them evenly over the pizza dough.
  7. Sprinkle crumbled feta cheese on top of the vegetables.
  8. Bake the pizza in the oven for an additional 15-20 minutes, or until the crust is golden brown and the cheese is slightly melted.
  9. Remove from the oven, garnish with chopped fresh parsley, slice, and serve hot.
