- Pizza dough - 200 grams
- Eggplant - 100 grams, diced
- Zucchini - 100 grams, diced
- Red bell pepper - 50 grams, diced
- Tomato - 100 grams, diced
- Red onion - 50 grams, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, combine the diced eggplant, zucchini, red bell pepper, tomato, red onion, minced garlic, olive oil, oregano, salt, and black pepper. Toss well to coat the vegetables.
- Spread the vegetable mixture onto a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes, stirring halfway through.
- While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a pizza stone or baking sheet.
- Once the vegetables are roasted, remove them from the oven and spread them evenly over the pizza dough.
- Sprinkle crumbled feta cheese on top of the vegetables.
- Bake the pizza in the oven for an additional 15-20 minutes, or until the crust is golden brown and the cheese is slightly melted.
- Remove from the oven, garnish with chopped fresh parsley, slice, and serve hot.
