Ingredients

  • Zucchini - 200 grams
  • Eggplant - 150 grams
  • Bell pepper (red or yellow) - 100 grams
  • Cherry tomatoes - 100 grams
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and slice the zucchini, eggplant, and bell pepper into bite-sized pieces.
  3. In a large bowl, combine the sliced vegetables with cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to coat.
  4. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and let cool slightly, then sprinkle crumbled feta cheese and chopped parsley over the top before serving.
