- Zucchini - 200 grams
- Eggplant - 150 grams
- Bell pepper (red or yellow) - 100 grams
- Cherry tomatoes - 100 grams
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Wash and slice the zucchini, eggplant, and bell pepper into bite-sized pieces.
- In a large bowl, combine the sliced vegetables with cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to coat.
- Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
- Remove from the oven and let cool slightly, then sprinkle crumbled feta cheese and chopped parsley over the top before serving.
