Ingredients
- Zucchini - 200 grams
- Eggplant - 150 grams
- Potato - 150 grams
- Red bell pepper - 100 grams
- Onion - 1 medium (about 100 grams)
- Garlic - 2 cloves
- Olive oil - 4 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- Wash and slice the zucchini, eggplant, potato, and red bell pepper into even-sized pieces.
- Peel and slice the onion into thin wedges, and mince the garlic cloves.
- In a large bowl, combine the sliced vegetables, onion, garlic, olive oil, dried oregano, salt, and black pepper. Toss until well coated.
- Transfer the vegetable mixture to a baking dish, spreading it evenly.
- Add the water to the bottom of the baking dish to help steam the vegetables.
- Cover the dish with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil, sprinkle the chopped parsley over the top, and bake for an additional 15 minutes or until the vegetables are tender and slightly caramelized.
- Remove from the oven and let it cool for a few minutes before serving.
