Ingredients

  • Zucchini - 200 grams, sliced
  • Eggplant - 200 grams, sliced
  • Potato - 150 grams, peeled and sliced
  • Red bell pepper - 100 grams, sliced
  • Onion - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 60 ml
  • Lemon juice - 30 ml
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 100 ml

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a large mixing bowl, combine the sliced zucchini, eggplant, potato, red bell pepper, onion, and minced garlic.
  3. In a separate bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
  4. Pour the dressing over the vegetables and toss until they are evenly coated.
  5. Transfer the vegetable mixture to a baking dish, spreading it out evenly.
  6. Add the water to the bottom of the baking dish to help with steaming.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and slightly caramelized.
  9. Remove from the oven and let it cool for a few minutes before serving.
