- Zucchini - 200 grams, sliced
- Eggplant - 200 grams, sliced
- Potato - 150 grams, peeled and sliced
- Red bell pepper - 100 grams, sliced
- Onion - 100 grams, sliced
- Garlic - 2 cloves, minced
- Olive oil - 60 ml
- Lemon juice - 30 ml
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 ml
Steps
- Preheat the oven to 200°C (392°F).
- In a large mixing bowl, combine the sliced zucchini, eggplant, potato, red bell pepper, onion, and minced garlic.
- In a separate bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
- Pour the dressing over the vegetables and toss until they are evenly coated.
- Transfer the vegetable mixture to a baking dish, spreading it out evenly.
- Add the water to the bottom of the baking dish to help with steaming.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and let it cool for a few minutes before serving.
