- Phyllo pastry - 6 sheets
- Fresh spinach - 200 grams, chopped
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dill - 1 tablespoon, chopped
- Water - 2 tablespoons, for moisture
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and chopped spinach to the skillet, cooking until the spinach is wilted, about 3-4 minutes.
- Remove from heat and mix in the nutritional yeast, salt, black pepper, and dill. Allow the mixture to cool.
- Lay out one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Layer another sheet on top and brush again.
- Place a portion of the spinach mixture along one edge of the phyllo, then roll it tightly into a log shape.
- Repeat the process for the remaining sheets and filling, placing the rolled bougatsa on a baking tray lined with parchment paper.
- Brush the tops of the rolls with a little olive oil and bake in the preheated oven for 25 minutes or until golden brown.
- Remove from oven, allow to cool slightly, then slice and serve warm.
