- Phyllo pastry - 4 sheets
- Unsalted butter - 30 grams, melted
- Milk - 300 ml (low-fat or almond milk for healthier option)
- Eggs - 1 large
- Granulated sugar - 50 grams
- Cornstarch - 30 grams
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Powdered sugar - for dusting
Steps
- Preheat the oven to 180°C (350°F).
- In a saucepan, combine the milk, sugar, and cornstarch; whisk until smooth.
- Place the saucepan over medium heat and continue whisking until the mixture thickens and comes to a gentle boil.
- Remove from heat and add the egg, vanilla extract, and lemon zest, whisking until fully incorporated.
- Set the custard aside to cool while you prepare the phyllo pastry.
- Brush a baking dish with melted butter and lay 2 sheets of phyllo pastry, brushing each sheet with melted butter as you layer them.
- Spread half of the custard mixture over the phyllo layers.
- Top with 2 more sheets of phyllo, again brushing with melted butter between each layer.
- Pour the remaining custard over the top, then fold the edges of the phyllo over the custard to enclose it.
- Brush the top with the remaining melted butter.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Allow to cool slightly before dusting with powdered sugar and serving.
