  • Phyllo pastry - 4 sheets
  • Unsalted butter - 30 grams, melted
  • Milk - 300 ml (low-fat or almond milk for healthier option)
  • Eggs - 1 large
  • Granulated sugar - 50 grams
  • Cornstarch - 30 grams
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, combine the milk, sugar, and cornstarch; whisk until smooth.
  3. Place the saucepan over medium heat and continue whisking until the mixture thickens and comes to a gentle boil.
  4. Remove from heat and add the egg, vanilla extract, and lemon zest, whisking until fully incorporated.
  5. Set the custard aside to cool while you prepare the phyllo pastry.
  6. Brush a baking dish with melted butter and lay 2 sheets of phyllo pastry, brushing each sheet with melted butter as you layer them.
  7. Spread half of the custard mixture over the phyllo layers.
  8. Top with 2 more sheets of phyllo, again brushing with melted butter between each layer.
  9. Pour the remaining custard over the top, then fold the edges of the phyllo over the custard to enclose it.
  10. Brush the top with the remaining melted butter.
  11. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  12. Allow to cool slightly before dusting with powdered sugar and serving.
