Ingredients

  • Phyllo dough - 6 sheets
  • Feta cheese - 150 grams
  • Ricotta cheese - 100 grams
  • Egg - 1 large
  • Greek yogurt - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional for topping)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, crumble the feta cheese and combine it with the ricotta cheese, egg, Greek yogurt, salt, and black pepper until well mixed.
  3. Lay out 2 sheets of phyllo dough on a clean surface and brush them lightly with olive oil. Repeat with 2 more sheets, layering them on top.
  4. Spoon half of the cheese mixture along one edge of the phyllo dough, then fold the sides over the filling and roll it up tightly to form a log.
  5. Place the rolled bougatsa seam-side down on a baking tray lined with parchment paper.
  6. Repeat the process with the remaining phyllo sheets and cheese mixture to make a second bougatsa.
  7. Brush the tops of the bougatsas with olive oil and sprinkle sesame seeds if desired.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp.
  9. Remove from the oven and let cool slightly before slicing and serving warm.
