- Greek yogurt - 50 grams
- Olive oil - 2 tablespoons

- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (optional for topping)
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, crumble the feta cheese and combine it with the ricotta cheese, egg, Greek yogurt, salt, and black pepper until well mixed.
- Lay out 2 sheets of phyllo dough on a clean surface and brush them lightly with olive oil. Repeat with 2 more sheets, layering them on top.
- Spoon half of the cheese mixture along one edge of the phyllo dough, then fold the sides over the filling and roll it up tightly to form a log.
- Place the rolled bougatsa seam-side down on a baking tray lined with parchment paper.
- Repeat the process with the remaining phyllo sheets and cheese mixture to make a second bougatsa.
- Brush the tops of the bougatsas with olive oil and sprinkle sesame seeds if desired.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp.
