Ingredients

  • Phyllo pastry sheets - 4 sheets
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Egg - 1 large
  • Fresh dill - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine crumbled feta cheese, ricotta cheese, egg, chopped dill, salt, and black pepper. Mix well until the ingredients are thoroughly combined.
  3. Take one sheet of phyllo pastry and brush it lightly with olive oil. Place a second sheet on top and brush it with olive oil as well.
  4. Spoon a portion of the cheese mixture along one edge of the phyllo, forming a line. Fold the sides of the phyllo over the filling and roll it up tightly to form a log.
  5. Repeat the process with the remaining phyllo sheets and cheese mixture.
  6. Place the rolled bougatsa on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle sesame seeds over them.
  7. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  8. Remove from the oven and let cool for a few minutes before slicing and serving warm.
