Ingredients

  • Almond flour - 200 grams
  • Psyllium husk - 15 grams
  • Eggs - 2 large
  • Olive oil - 30 ml
  • Feta cheese - 100 grams, crumbled
  • Spinach - 100 grams, cooked and chopped
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Oregano - 1/2 teaspoon
  • Butter - 20 grams, melted for brushing

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, and salt.
  3. In another bowl, whisk together the eggs and olive oil until smooth.
  4. Add the egg mixture to the dry ingredients and mix until a dough forms.
  5. Knead the dough for a few minutes until it becomes smooth and pliable.
  6. On a parchment-lined surface, roll out the dough into a rectangle about 5 mm thick.
  7. In a separate bowl, combine the crumbled feta cheese, cooked spinach, pepper, and oregano.
  8. Place the filling along one edge of the rolled-out dough, then carefully roll the dough over the filling to create a log.
  9. Brush the top of the pastry with melted butter and place it seam-side down on the baking sheet.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown.
  11. Let it cool for a few minutes before slicing and serving.
