- Psyllium husk - 15 grams
- Eggs - 2 large
- Olive oil - 30 ml
- Feta cheese - 100 grams, crumbled
- Spinach - 100 grams, cooked and chopped
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Oregano - 1/2 teaspoon
- Butter - 20 grams, melted for brushing
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk, and salt.
- In another bowl, whisk together the eggs and olive oil until smooth.
- Add the egg mixture to the dry ingredients and mix until a dough forms.
- Knead the dough for a few minutes until it becomes smooth and pliable.
- On a parchment-lined surface, roll out the dough into a rectangle about 5 mm thick.
- In a separate bowl, combine the crumbled feta cheese, cooked spinach, pepper, and oregano.
- Place the filling along one edge of the rolled-out dough, then carefully roll the dough over the filling to create a log.
- Brush the top of the pastry with melted butter and place it seam-side down on the baking sheet.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Let it cool for a few minutes before slicing and serving.
