- Oats - 50 grams, finely ground
- Red onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Greek yogurt - 100 grams
- Cucumber - 1/2, grated and excess water squeezed out
- Lemon juice - 1 tablespoon
- Fresh dill - 1 tablespoon, chopped
- Whole wheat burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
Steps
- In a mixing bowl, combine the grated beetroot, chickpeas, ground oats, red onion, garlic, parsley, cumin, salt, and black pepper. Mash the mixture until well combined but still slightly chunky.
- Form the mixture into 2 equal-sized patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and heated through.
- While the patties are cooking, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, lemon juice, dill, and a pinch of salt in a small bowl. Mix well and set aside.
- Toast the whole wheat burger buns in the same skillet for 1-2 minutes until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a beetroot patty, a generous dollop of tzatziki, and a slice of tomato. Top with the other half of the bun and serve immediately.
