- Beetroot - 200 grams
- Almond flour - 100 grams
- Eggs - 2 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic - 1 clove, minced
- Fresh basil - a handful, chopped
- Cherry tomatoes - 100 grams, halved
Steps
- Preheat the oven to 200°C (390°F). Wrap the beetroot in aluminum foil and roast for 30 minutes, or until tender. Let cool, peel, and blend into a smooth puree.
- In a mixing bowl, combine the almond flour, salt, and black pepper. Create a well in the center and add the beetroot puree, eggs, and olive oil. Mix until a dough forms.
- Knead the dough lightly on a floured surface for about 2 minutes until smooth. If it's too sticky, add a little more almond flour.
- Roll out the dough using a rolling pin to a thickness of about 2 mm. Cut into tagliatelle strips using a sharp knife or pasta cutter.
- Bring a pot of salted water to a boil. Add the beetroot tagliatelle and cook for 3-4 minutes until al dente. Drain and set aside.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook for another 2-3 minutes.
- Toss the cooked tagliatelle into the skillet with the tomatoes, mixing gently to combine. Add chopped basil and season with additional salt and pepper as desired.
- Serve warm, garnished with extra basil if desired.
