Ingredients

  • Beef chuck, diced - 300 grams
  • Onions, sliced - 2 medium (about 200 grams)
  • Garlic, minced - 3 cloves
  • Tomato paste - 2 tablespoons
  • Canned chopped tomatoes - 400 grams
  • Red wine - 150 ml
  • Olive oil - 2 tablespoons
  • Cinnamon stick - 1
  • Bay leaf - 1
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced onions and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced beef to the pot and brown on all sides, about 5-7 minutes.
  5. Stir in the tomato paste and cook for 2 minutes, allowing it to caramelize slightly.
  6. Pour in the red wine and scrape any bits from the bottom of the pot, allowing it to reduce for 3-5 minutes.
  7. Add the canned chopped tomatoes, cinnamon stick, bay leaf, allspice, salt, and black pepper.
  8. Bring the mixture to a boil, then reduce the heat to low and cover.
  9. Simmer for 60-70 minutes, or until the beef is tender and the sauce has thickened.
  10. Remove the bay leaf and cinnamon stick before serving. Garnish with fresh parsley.
