Ingredients
- Beef chuck, diced - 300 grams
- Onions, sliced - 2 medium (about 200 grams)
- Garlic, minced - 3 cloves
- Tomato paste - 2 tablespoons
- Canned chopped tomatoes - 400 grams
- Red wine - 150 ml
- Olive oil - 2 tablespoons
- Cinnamon stick - 1
- Bay leaf - 1
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the sliced onions and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced beef to the pot and brown on all sides, about 5-7 minutes.
- Stir in the tomato paste and cook for 2 minutes, allowing it to caramelize slightly.
- Pour in the red wine and scrape any bits from the bottom of the pot, allowing it to reduce for 3-5 minutes.
- Add the canned chopped tomatoes, cinnamon stick, bay leaf, allspice, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover.
- Simmer for 60-70 minutes, or until the beef is tender and the sauce has thickened.
- Remove the bay leaf and cinnamon stick before serving. Garnish with fresh parsley.
