Ingredients

  • Lean beef (chuck or stew meat) - 300 grams, cut into bite-sized pieces
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato - 1 medium, diced
  • Potato - 1 medium, diced
  • Beef broth - 500 milliliters
  • Water - 200 milliliters
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  2. Add the diced beef to the pot and brown on all sides, about 5-7 minutes.
  3. Stir in the carrot, celery, tomato, and potato, cooking for another 5 minutes.
  4. Pour in the beef broth and water, then add the dried oregano, dried thyme, salt, and black pepper.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 40 minutes, or until the beef is tender.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
