- Lean beef (chuck or stew meat) - 300 grams, cut into bite-sized pieces
- Olive oil - 1 tablespoon
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Potato - 1 medium, diced
- Beef broth - 500 milliliters
- Water - 200 milliliters
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the diced beef to the pot and brown on all sides, about 5-7 minutes.
- Stir in the carrot, celery, tomato, and potato, cooking for another 5 minutes.
- Pour in the beef broth and water, then add the dried oregano, dried thyme, salt, and black pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 40 minutes, or until the beef is tender.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
