- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Bell pepper - 1 medium, diced
- Canned white beans - 400 grams, drained and rinsed
- Vegetable broth - 500 milliliters
- Diced tomatoes - 200 grams, canned
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced carrot, celery, and bell pepper. Cook for an additional 5-7 minutes until vegetables are tender.
- Add the white beans, vegetable broth, diced tomatoes, oregano, thyme, salt, and pepper to the pot.
- Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
- Taste and adjust seasoning if necessary.
