- Black pepper - 1/2 teaspoon
- Baking powder - 1 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a large bowl, whisk together the chickpea flour, baking powder, salt, and black pepper.
- Gradually add the water to the dry ingredients, mixing until smooth and free of lumps.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the red onion until translucent, about 3-4 minutes.
- Add the grated zucchini and chopped spinach to the skillet, cooking for an additional 5 minutes until the vegetables are softened.
- Remove the skillet from heat and stir in the chopped parsley.
- Combine the sautéed vegetables with the chickpea batter, mixing well.
