- Okra - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse and trim the okra, cutting off the tops and tails.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the okra and cook for an additional 5 minutes until it starts to soften.
- Add the canned diced tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Stir in the chopped parsley and lemon juice just before serving. Adjust seasoning to taste.
