Ingredients

  • Okra - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 500 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse and trim the okra, cutting off the tops and tails.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the okra and cook for an additional 5 minutes until it starts to soften.
  5. Add the canned diced tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  6. Stir in the chopped parsley and lemon juice just before serving. Adjust seasoning to taste.
