- Chickpea flour - 60 grams
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture.
- In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it thickens.
- In a large mixing bowl, combine the grated zucchini, chickpea flour, flaxseed mixture, chopped green onion, minced garlic, parsley, oregano, salt, and pepper. Mix until well combined.
- Using your hands, form the mixture into small fritters, about 5 cm in diameter, and place them on the prepared baking sheet.
- Drizzle the fritters with olive oil and gently press them down to flatten slightly.
- Bake in the preheated oven for 20 minutes, flipping halfway through, until golden brown and crispy.
