Ingredients

  • Zucchini - 300 grams
  • Chickpea flour - 60 grams
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture.
  3. In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it thickens.
  4. In a large mixing bowl, combine the grated zucchini, chickpea flour, flaxseed mixture, chopped green onion, minced garlic, parsley, oregano, salt, and pepper. Mix until well combined.
  5. Using your hands, form the mixture into small fritters, about 5 cm in diameter, and place them on the prepared baking sheet.
  6. Drizzle the fritters with olive oil and gently press them down to flatten slightly.
  7. Bake in the preheated oven for 20 minutes, flipping halfway through, until golden brown and crispy.
