Ingredients

  • Whole wheat ziti pasta - 150 grams
  • Extra virgin olive oil - 1 tablespoon
  • Lean ground turkey - 200 grams
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 400 grams
  • Spinach - 100 grams, fresh
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 50 grams, pitted and sliced
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cook the whole wheat ziti pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the extra virgin olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is translucent.
  4. Add the lean ground turkey to the skillet, cooking until browned and fully cooked through, about 5-7 minutes.
  5. Stir in the canned diced tomatoes, fresh spinach, oregano, salt, and black pepper. Cook for an additional 5 minutes until the spinach wilts.
  6. In a large mixing bowl, combine the cooked ziti, turkey and vegetable mixture, crumbled feta cheese, and sliced Kalamata olives. Mix until well combined.
  7. Transfer the mixture into a baking dish and sprinkle the grated Parmesan cheese on top.
  8. Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
  9. Remove from the oven, let it cool for a few minutes, and serve warm.
